Zucchini Slice

This is one of the nicest Zucchini Slices I have ever made. It is a real winner and comes from
the Old fashioned Australian Recipes Facebook page. They have lots of really old recipes like my grandmother and mother used to make
ZUCCHINI SLICE
Ingredients
2 medium zucchini finely diced
1 carrot finely diced
1 small onion finely diced
1 cup bacon pieces finely diced
1 cup grated cheese (save 1/4 cup to sprinkle on top)
2 tablesp grated Parmesan cheese
1/2 cup corn
1/2 cup frozen peas
1/2 cup red capsicum if desired
5 eggs
1 cup SR flour
1/4 cup oil
salt and pepper
Method
Set oven to 170C
Prepare a deep slice pan or brownie pan with baking paper
Spray with cooking oil
Sauté onion and bacon
You can chop carrot and zucchini in food processor to the size of a fine dice but not purée
Mix all together including the oil
Pour into prepared pan
Sprinkle cheese on top
Bake till golden and springs back when touched
