Zucchini Slice

Zucchini Slice

This is one of the nicest Zucchini Slices I have ever made. It is a real winner and comes from

the Old fashioned Australian Recipes Facebook page. They have lots of really old recipes like my grandmother and mother used to make



2 medium zucchini finely diced

1 carrot finely diced

1 small onion finely diced

1 cup bacon pieces finely diced

1 cup grated cheese (save 1/4 cup to sprinkle on top)

2 tablesp grated Parmesan cheese

1/2 cup corn

1/2 cup frozen peas

1/2 cup red capsicum if desired

5 eggs

1 cup SR flour

1/4 cup oil

salt and pepper


  1. Set oven to 170C

  2. Prepare a deep slice pan or brownie pan with baking paper

  3. Spray with cooking oil

  4. Sauté onion and bacon

  5. You can chop carrot and zucchini in food processor to the size of a fine dice but not purée

  6. Mix all together including the oil

  7. Pour into prepared pan

  8. Sprinkle cheese on top

  9. Bake till golden and springs back when touched
