White Christmas


4 cups rice bubbles

1/3 cup mixed peel or orange and lemon zest

½ cup sultanas

1 cup roasted, chopped blanched almonds

1 cup dried cranberries or cherries

1 cup diced dried apricots

1 cup shredded coconut

375 gm pkt white choc buttons

250 gms butter

175 mls condensed milk

250 gms white choc buttons for topping

50 gms copha


1. Line tray with baking paper

2. Mix all dry ingredients in a bowl

3. Combine melted chocolate and butter with condensed milk

4. Mix till smooth

5. Pour over dry ingredients in the bowl

6. Mix well till completely combined

7. Pour into prepared tray and spread evenly

8. Combine 250gms chocolate buttons with copha in a saucepan

9. Melt and stir till well combined

10. Pour evenly over mixture in the tray

11. Wait a few minutes and then mark out finger sizes

12. Refrigerate till set

13. Cut evenly with a sharp knife that has been warmed in a jug of hot water

14. Store in a sealed container and keep refrigerated
