Try This Sweetcorn Bake

Try out this Sweetcorn Bake. We loved it. It is a very simple recipe with lots of flavour.
Sunday morning is a time when we are not rushing to be anywhere by any time and only using one dish and taking only 40 to 50 minutes to cook, the cleanup was minimal and it was worth waiting for.
I love making something that can be used for breakfasts or lunches during the week
I really recommend that you try it.
Sweet Corn Bake
Ingredients
440g canned corn drained
1/2 cup carrot coarsely grated
1/2 cup red capsicum diced
1/2 cup celery stalk diced optional
1/2 onion grated *optional
4 lean bacon rashers chopped
30g butter melted
4 eggs beaten
1/2 cup cheese coarsely grated
1/2 cup self-raising flour
1 pinch seasoning *to taste
Method
In a large bowl mix together onion, carrot, capsicum and celery.
Add bacon, sweetcorn, butter, eggs and seasoning.
Fold in cheese and flour and mix well with a wooden spoon.
Pour into a 23cm square dish or two small loaf tins.
Bake at 180C for 40 to 50 minutes or until set.
