Salmon Patties
Ingredients
12 cup sushi rice
Vegetable oil
3 spring onions
415g can pink salmon, deboned, drained and flaked
1 tablesp kewpie mayonnaise
1 egg
1 cup panko crumbs
2 tablesp white sesame seeds
2 tablesp black sesame seeds
1 tablesp chicken stock powder
Method
1. Rinse rice well and add to a saucepan of water
2. Boil approx. 10 mins. Drain and set aside
3. Slice spring onions and cook in oil
4. Into a bowl add rice, salmon, spring onions, and mayo
5. Form into patties
6. Whisk egg and season with salt and pepper
7. Add chicken stock, sesame seeds and stock powder to panko crumbs
8. Set up dishes in a row….patties, flour, egg and panko crumb nmix
9. Dip each patty into flour, egg and then panko mix
10. Heat sufficient oil for shallow frying
11. Cook patties 2-3mins on each side on low to med temperature
12. Cook till golden brown
13. Drain on paper towel
14. Serve as photographed above
