Tropical Mess Dessert

We have all heard of Eton Mess, the dessert that has been a firm favourite in English tradition relating to the boy's school in Eton in England
Today, I have a delicious Australian version of Eton Mess.
It is better to make it the day before to allow the flavours to develop.
Store in the refrigerator till required

Tropical Mess
Ingredients
12 mini meringue nests (ready prepared)
1 cup lemon or lime butter (store-bought or make your own from the recipe below)
4-6 bananas depending on size
8 small or 4 large passionfruit
600mls fresh cream whipped with vanilla
1 box of meringue stars if desired for decorating
1 punnet of strawberries, blueberries or raspberries for decorating
2 extra passionfruit for decorating if desired
Method
Crush 6 meringues into the bottom of a bowl...preferably glass
Spread with 1/2 cup lime/lemon butter
Slice bananas thinly and arrange in a layer on top of meringues and lemon butter
Sprinkle with fresh passionfruit pulp
Spoon in half of whipped cream
Arrange another layer, crushed meringues, lemon butter, bananas and passionfruit
Top with remaining cream
Cover and refrigerate till required
Decorate just before serving
This will serve at least 12 guests so is a great one for a party
Store leftovers in a covered container in the fridge
Will keep for 3 or 4 days
Lemon or Lime Butter
Ingredients
195mls strained lemon or lime juice
200gms butter
165gms white sugar
4 well-beaten eggs
Method
Combine juice and butter in a saucepan.
Stir over low heat till butter melts
Whisk sugar and eggs together till well mixed
Add to saucepan with juice and butter (off the heat)
Return to heat and stir constantly for 4 to 5 mins on medium heat till mixture thickens
Try not to allow the mixture to boil. If boiled your lemon/lime butter will curdle
Pour into a sealed container and leave to cool
Makes about 2 cups.
Delicious on toast or crumpets
