To Commemorate Anzac Day




Vegan Anzac Biscuits

Ingredients

  • 110 g (1 cup) rolled oats

  • 150 g 1 cup)  wholemeal plain flour

  • 120 g (2/3 cup) coconut  sugar

  • 70 g (2/3 cup) desiccated coconut

  • 125 g nuttelex

  • 2 tbs golden syrup

  • 1/2 tsp bicarbonate of soda

Method

  1. 1. Preheat oven to 170C

  2. Prepare oven trays with baking paper and grease

  3. Combine all dry ingredients

  4. Melt nuttelex and golden syrup in a saucepan

  5. Add bicarb soda till froths.

  6. Add to dry ingredients and stir to combine

  7. Roll mixture into balls and place on prepared tray, 5-6cms apart

  8. Flatten slightly

  9. Bake 14 to 18 minutes

  10. Cool on trays or flat on a cooling rack

  11. Store in an airtight container
