To Commemorate Anzac Day


Vegan Anzac Biscuits
Ingredients
110 g (1 cup) rolled oats
150 g 1 cup) wholemeal plain flour
120 g (2/3 cup) coconut sugar
70 g (2/3 cup) desiccated coconut
125 g nuttelex
2 tbs golden syrup
1/2 tsp bicarbonate of soda
Method
1. Preheat oven to 170C
Prepare oven trays with baking paper and grease
Combine all dry ingredients
Melt nuttelex and golden syrup in a saucepan
Add bicarb soda till froths.
Add to dry ingredients and stir to combine
Roll mixture into balls and place on prepared tray, 5-6cms apart
Flatten slightly
Bake 14 to 18 minutes
Cool on trays or flat on a cooling rack
Store in an airtight container
