Sticky Date Tray Bake

This is a tried and true recipe loved by all who try it. I used an ovenproof dish as I didn't have a tray

Sticky date Tray Bake


1+ 1/2 cups pitted dates, roughly chopped

50g butter, cut into 1cm cubes

1/2 tsp bicarbonate of soda

1/2 cup boiling water

2 free range eggs

3/4 cup brown sugar

1+1/2 cups self-raising flour

Icing sugar (to dust)

Double thick cream (to serve)

Icecream or custard to serve

Caramel Sauce

1+1/2 cups brown sugar

50g butter, cut into 1cm cubes

1 1/2 cups boiling water

1 tablesp golden syrup


  1. Preheat oven to 180°C/160°C fan-forced.

  2. Lightly grease a 20 x 27cm (5cm deep) baking tray.

  3. Place dates and butter in a small bowl.

  4. Add bicarbonate of soda and 1/2 cup boiling water.

  5. Set aside for 10 minutes. Stir.

  6. Place butter and brown sugar in a large bowl and beat until combined.

  7. Add eggs and beat till white

  8. Remove from beaters

  9. Fold in date mixture and flour alternately.

  10. Pour batter into tray and smooth over

To make the caramel sauce:

  1. Place brown sugar, butter, golden syrup, and 1 +1/2 cups boiling water in a large jug.

  2. Stir until butter has melted.

  3. Stand for 10 minutes to cool slightly


  1. Slowly pour mixture over back of a large metal spoon to cover batter.

  2. Bake for 40 minutes or until pudding bounces back when gently touched.

  3. Dust with icing sugar

  4. Serve immediately with cream, custard, or icecream
