Sour Cream and Prune Cake.

This is a really delicious moist cake that can be used for afternoon tea, morning tea or as a dessert
I have also made this cake by using a large pear cut into pieces. You could also use a large apple. When I used pear, I actually cooked the sliced pear in the port but decided that it was not really necessary.

Sour Cream, Prune and Macadamia Cake
Ingredients
18 pitted prunes
1/3 cup port
125g butter
1 cup caster sugar
2 eggs
1x 300 ml carton sour cream
1 tsp bicarb soda
1 1/2 cups plain flour sifted.
1 1/3 teasp baking powder
Topping
2 tbsp chopped macadamia nuts
1/4 cup brown sugar
Method
Soak prunes in port overnight
Cream. butter and sugar.
Add eggs
Beat until white and fluffy
Sour cream and bicarb soda.
Fold in plain flour, baking powder and prunes.
Grease and line 22cm springform pan or 13 x 25 loaf pan
Pour mixture into pan
Sprinkle half the topping mix over the cake and swirl through using a knife.
Sprinkle the remaining mix on top
Bake 180 deg Celsius for 45 - 50 mins.
It's very yummy as a dessert with ice cream
Note: I used a loaf pan 13 x 25cm to make this Pear and Port Sour Cream Cake
