Shortbread for Christmas

Shortbread is always a great gift for Christmas. It is even more special if you make your own

Shortbread
Ingredients
Melted butter to grease
225gms plain flour
120gms rice flour
100gms caster sugar
Pinch salt
225 cold butter coarsely chopped
flour extra to dust
Method
Preheat oven to 150C
Brush 2 large baking trays with melted butter to lightly grease
Combine flour, rice flour, sugar and salt in a bowl
Use your fingertips to rub butter into flour till it resembles breadcrumbs
Turn onto a lightly floured surface and knead till smooth
Roll dough to 1 cm thick
Use a 5cm diameter cutter to cut shapes from dough
Bake for 45 mins or till shortbread begins to take colour
Cool on trays for 1 hour
Drizzle or dip in white chocolate
