Sausage and Vegetable Bake

This recipe is great to make the day before shopping. It is a good way to use up all leftover vegetables ready to start fresh after shopping. almost all vegetables are suitable for roasting, the more delicate ones like broccoli, cauliflower, and beans, going in with the sausages for a shorter cooking time

I love this dish because it is a traybake and you need only the tray that it is baked in.

Sausages are budget-friendly and if you buy good quality sausages, they contain very little fat.

Such an easy, but still delicious, meal

Sausage and Vegetable Bake


1kg good quality sausages



Sweet potato


Red onion


Any vegetables that need using

1-2 tablesp olive oil

Salt and pepper


1. Preheat oven to 200C

2. Peel and chop vegetables into similar sized pieces

3. Place olive oil in a large baking dish

4. Lay vegetables out in the baking dish

5. Drizzle with olive oil

6. Sprinkle liberally with salt and pepper

7. Place in the oven for 30 minutes until partly cooked

8. Lay sausages on top of the vegetables

9. Place back in the oven for 20 to 30 mins

10. Turn sausages after 15mins

11. Remove from the oven

12. Serve from the baking dish with some steamed greens or peas and corn
