Rainbow Vegetable Slice

This recipe is full of vegetables and a great way to take in a large percentage of the daily requirement. There is very little fat and this can be made even less by using more egg whites and less yolks. I always use low fat cheese in this type of recipe as the fat often sits on the top after cooking. The slice needs to look good!!!!


Rainbow Vegetable Slice

Ingredients 8 eggs (4 yolks, 8 whites if you prefer) 1 cup grated cheddar (try low fat)

!/2 cup parmesan cheese 1 small yellow capsicum, diced 1 red onion, diced

1 clove garlic finely diced 200 grams cherry tomatoes, halved 1 cup of broccoli, florets only

1 cup cauliflower, florettes only

1/2 cup picked parsley leaves

salt and pepper Extra grated cheese for on top

Extra parmesan cheese for on top Method 1       Preheat oven to 200 degrees celsius.

2. Prepare a loaf pan with baking paper. Grease 3       Whisk the eggs until well whisked, by hand.

4. Add salt and pepper 5       Combine all the chopped veggies, herbs and cheese in a loaf pan (120 x 220cm)

6. Mix together. 7      Pour the egg mix over the top of vegetables 8      Sprinkle extra grated cheeses on top 9      Bake at 200 degrees for 35 minutes. 10     Cool in the pan for 10 minutes before transferring to a plate to slice

11. Great for breakfast, or for lunch or dinner with a salad
