This is a very old family recipe but I think that it is still a winner!

500gms minced beef or beef and pork combination

100gms finely diced bacon

1/4 cup long grain rice uncooked

1 egg slightly beaten

1 tablespoon parsley chopped

1 onion finely chopped

2 tablesp tomato sauce

Pinch pepper

1/2 teaspoon salt

1 teasp mixed herbs

1 can condensed tomato soup

1/2 cup water

2 teaspoons Worcestershire sauce

  1. Preheat oven to 180C

  2. In a medium sized bowl combine meat, rice, egg, parsley, onion, herbs, pepper, salt and tomato sauce

  3. Mix thoroughly and shape into about 20 meatballs and place in a french oven or casserole dish

  4. Mix soup, water, and Worcestershire sauce in a jug.

  5. Pour over meatballs.

  6. Bring to the boil on a cooktop.

  7. Remove and place in the oven

  8. Cover and bake in the oven for 40 -45 minutes

  9. Watch liquid level. You may need to add a little extra water

  10. (Can be cooked on the cooktop if you prefer but must be stirred often)

  11. Check that rice is cooked before removing from oven

  12. Sprinkle with freshly chopped parsley

  13. Serve with steamed vegetables
