Pea, Mint and Feta Fritters

Make up this delicious mixture ahead of time ready to cook when required

Pea Mint and Feta Fritters

Ingredients

2 cups zucchini grated

1 cup frozen defrosted peas, lightly mashed

1 handfull fresh mint roughly chopped

1 handful fresh parsley roughly chopped

100gms soft feta

2 large eggs

1/2 cup plain flour

2 shallots finely chopped

1red onion finely chopped

salt and pepper to taste

Oil for shallow frying

Sauce

1 cup plain greek style yoghurt

2 tablesp lime juice

1/2 teasp paprika

1 teasp honey

salt and pepper

1 tablesp finely chopped fresh mint

Method

  1. Remove excess water from zucchini by laying on paper towel

  2. Squeeze out excess moisture.

  3. Combine eggs, zucchini, peas, herbs, onions, feta, flour, salt, and pepper in a bowl

  4. Mix well

  5. Whisk together in a separate bowl, yoghurt, lime juice, paprika, honey and mint

  6. Place in fridge till required

  7. Heat oil in a pan on medium heat. Drop large spoonfulls into pan

  8. Shape into a fritter with a spoon

  9. Shallow fry on both sides till brown and crisp

  10. Lift out onto a paper towel-lined tray to drain

  11. Continue till all mixture has been used

  12. Serve with yoghurt mint sauce

  13. Serve with a tossed salad or Sweet Corn and Bean Salad from our Dragonflys Recipes
