Raspberry Coconut Slice

Ingredients

Pastry

60gms butter

1/4 cup caster sugar

1 egg

vanilla

1+1/4 cup Self Raising Flour


Topping

3/4 cup raspberry jam

1egg

1 cup desiccated coconut

3/4 cup caster sugar


Method

  1. Preheat oven to 180C

  2. Prepare 25 x 9cm slice pan

  3. Beat butter and sugar to a cream

  4. Add egg and beat well

  5. Sift flour and add to mixture gradually

  6. Work to a soft dough

  7. Press out evenly into slice pan

  8. Spread evenly with raspberry jam

Topping

9. Beat egg and sugar

10. Add coconut and mix well

11. Spread coconut mixture lightly over jam and pastry

12. Use a fork to make it rough but even

13. Bake at 180C till golden brown

14. Allow to cool before cutting into squares
