Noodle Salad

Kids love noodles so it is not difficult to get them to enjoy noodles. The difficulty sets in when you introduce the vegetables. You can add what ever your child's / family's favourite vegetables are to this recipe. If your child likes nuts, a few nuts on the top can often encourage them to give it a try

Ingredients

500gm package angel hair pasta


1 green shallot, finely sliced


1 small red capsicum, diced

1 small green capsicum diced

1 cup fresh bean sprouts

1 shredded carrot if desired

1/2 cup picked parsley leaves

1/2 cup picked coriander leaves

1 tablespoon sesame oil


1/2 cup light soy sauce


1/4 cup balsamic vinegar


1 tablespoon white sugar

1 clove garlic finely chopped

1 tablespoon good quality olive oil


1 teaspoon sesame seeds to garnish (or more if desired)

1/2 cup deep fried red shallots to garnish and to add crunch (available from supermarket)

OR 1/2 cup roasted peanuts


Method


  1. Fill a large pot with lightly salted water and bring to a rolling boil

  2. Once the water is boiling, stir in the angel hair pasta, and return to a boil.

  3. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked but is still firm to the bite, 4 to 5 minutes.

  4. Drain well in a colander set in the sink. Rinse in cold water to stop the cooking process

  5. Whisk together the sesame oil, soy sauce, balsamic vinegar, olive oil, chopped garlic and sugar in a large bowl.

  6. Prepare vegetables and add to noodles

  7. Toss the pasta in the dressing, then sprinkle with sesame seeds, coriander and parsley leaves and maybe some crunchy fried shallots or nuts

  8. Serve warm, or cover and refrigerate for a cold salad
