Mozzarella Chicken

A simple dish featuring chicken and cheese with those Mediterranean flavours. Mmmmmmm

Mozzarella Chicken


1tbsp olive oil

1 onion, finely chopped

2 garlic cloves, thinly sliced

400g tinned chopped tomatoes

Fresh basil, chopped roughly or fresh oregano

Fresh parsley chopped roughly

1/2 cup chopped green shallots

300mls chicken stock

500g skinless chicken thighs

60g mozzarella cheese, grated

Note: For a more healthy version use chicken tenderloins which are thinner and almost completely free from fat


  1. Preheat the oven to fan-forced 180°C/200°C

  2. Heat the oil in a frying pan

  3. Add the onion and garlic and cook for 5 minutes, or until the onion softens.

  4. Add the chopped tomatoes, shallots, herb leaves and stock then brings to the boil.

  5. Reduce heat

  6. Leave to simmer with the lid off for 10-15 minutes, stirring occasionally.

  7. The sauce should thicken (it may need longer if making in bigger batches).

  8. Meanwhile, lightly flatten the chicken thighs to increase the surface area

  9. Place the chicken in an oven-proof dish.

  10. Cover the chicken with the sauce from the pan and add grated mozzarella to cover the dish.

  11. Transfer to the oven and cook for approximately 30 minutes, or until the chicken is completely cooked through and the cheese is melted.
