Macadamia and Ginger Anzac Biscuits

This recipe was given to me a long time ago.

I have made it several times and love it. If you are a fan of ginger, it gives this recipe a special flavour, but if not, it is still really nice just with the addition of the macadamia nuts.

Macadamia and Ginger Anzacs


125g butter, chopped

2 tablespoons golden syrup

½ teaspoon bi-carb soda

2 tablespoons boiling water

1 cup rolled oats

1 cup plain flour

3/4 cup firmly packed brown sugar

3/4 cup desiccated coconut

3/4 cup finely chopped macadamia nuts

1/4 cup finely chopped glace ginger


  1. Preheat oven to moderate (170 deg. Fan forced)

  2. Grease oven trays and line with baking paper

  3. Combine butter and syrup in a medium saucepan, stir over low heat until smooth.

  4. Stir in combined bi-carb soda and the water.

  5. Then stir in remaining ingredients

  6. Roll level tablespoons of mixture into balls.

  7. Place about 5cm apart on oven trays and flatten slightly.

  8. Bake for about 15 minutes

  9. Cool on trays.
