Lime or Lemon Butter

Thinking about Christmas? This is such an expensive time of year so maybe think about what you can make to ease the financial burden.


I always save the nice jars during the year to use at this time of year.


Lime or lemon butter in a nice jar with a ribbon is a very special gift. Limes are actually a bit expensive right now so perhaps use lemons. Lemon butter is just as nice. It runs rings around what you buy in the supermarket.


Store in the refrigerator till you are ready to gift it.


The below 250 gm jars were made by doubling this recipe

Lime or Lemon Butter

Ingredients

1/2 cup lemon or lime juice

2/3 cup sugar

4 teasp butter

2 eggs


Method

  1. Place lemon juice, sugar, and butter into a saucepan

  2. Stir well

  3. Add well-whisked eggs

  4. Turn heat on medium and stir constantly

  5. Stir till thick

  6. Do not boil

  7. Place in a jar

  8. Set aside till cool

  9. Store in the refrigerator

Note: The eggs need to be very well whisked. If you get small pieces of cooked egg white or yolk in your lemon butter, simply strain before bottling
