Leftover Vegetable Frittata


How often do you use vegetables leftover from a meal, particularly a roast?

For me....not often as I love vegetables so this is a favourite way to use up leftover cooked and roasted vegetable.


If you dont usually have leftover vegetables, cook extra so that you do....this is delicious!


This recipe serves at least 6


Three-Cheese Vegetable Frittata

Ingredients

At least 2-3 cups of leftover cooked vegetables

2 tablesp butter

1 onion finely diced

1/2 cup diced bacon or any left over roast meat (if desired)

1/2 cup grated cheese

1/2 cup parmesan cheese

1/2 cup feta cheese

1 cup chopped parsley

1/2 cup chopped shallots

1 cup baby spinach leaves

6 eggs (more people...add more eggs)

1/4 cup milk or cream

extra 1/2 cup grated cheese


Method

  1. Heat oven to 180C

  2. Melt butter in a frying pan

  3. Cook onion till soft

  4. Cook bacon/meat if using

  5. Add cooked vegetables and leave on medium heat till the bottoms start to crisp and brown up

  6. Mix cheese, herbs tand baby spinach hrough mixture carefully

  7. Try not to disturb the bottom too much. It is nice if the bottom is crispy

  8. Whisk eggs with a little milk or cream

  9. Pour over browned vegetables

  10. Move about slowly allowing the egg mixture to fall to the bottom of the pan between the vegetables

  11. Cook over medium heat till egg begins to set

  12. Sprinkle with extra cheese

  13. Place in oven to finish setting egg and till top goes a golden brown

  14. Remove from oven and leave to stand

  15. Cut into slices to serve

  16. Delicious served for breakfast with toast and roasted baby tomatoes.

  17. Add a tossed salad to serve for lunch or dinner
