Jam Roly Poly Pudding
We enjoyed this very old dessert. As you can see, I added apple and made Apple and Raspberry Roly Poly. Just right for this weather.
Jam Roly Poly Pudding:
1 cup SR flour
3 Tabs Butter
Sugar to taste
jam of choice - homemade raspberry was our favourite
1 cup stewed apple if using
1 cup boiling water
1/2 cup sugar
1 tab butter
Rub butter into flour and mix in sugar to taste
Mix to a stiff dough with a little milk
Roll out to an oblong about 2 cms thick.( width of tray x 25cms )
Spread with jam leaving a good margin at long edge and roll up
Seal the length with a little water but not the ends.
Place in a greased pie dish seam down
Bring water butter and sugar to the boil
Pour over pastry roll and sprinkle with sugar.
Place in a 180C oven for about 35 minutes or until cooked.
Serve hot with custard or cold with partly whipped thick cream.
Note Can substitute any jam
Can use stewed apples or apricots
