Ho Ho Ho.... Not Long to Go
Christmas is almost upon us. This is a great entertaining recipe suitable for the whole family. Most children love cheese and if you use their favourite ingredients in this recipe, it will be a winner every time. If this looks too large, see the note at the bottom and divide into 3 logs instead of one large ball. You can take one out of the fridge at a time. It keeps for ages well wrapped and refrigerated.
Cheese Ball Ingredients
250g bacon, chopped, divided OR
250g sliced and diced ham
1/4 cup sour cream
500g cream cheese, softened to room temp
1/2 cup any 4 cheese blend shredded
1 1/4 cups Bega, Strong and Bitey cheddar cheese, shredded and divided
1/4 cup green shallots, chopped finely and divided
1/2 cup walnuts, cashews, or macadamias, chopped and divided
3 Tbsp gherkins finely chopped ½ tsp garlic powder or 1 tsp crushed garlic if you prefer fresh ¼ tsp ground black pepper
1 1/4 tsp poppyseeds, divided
Cut bacon into small pieces and sauté until cooked.
Once cooled, set aside 1/4 of the bacon for the topping.
In a bowl, add 3/4 of the bacon, 1/4 cup sour cream, 500gms cream cheese, 1/2 cup four-cheese blend, 1 cup cheddar cheese, 3 Tbsp green onions, 1/4 cup nuts, 3 Tbsp finely chopped gherkins, 1/2 tsp garlic powder, 1/4 tsp pepper, and 1 tsp poppy seeds.
With a wooden spatula, mix all ingredients until well combined.
Finely chop the remaining 1/4 of bacon, 1/4 cup cheddar cheese, 1 Tbsp green onion, and 1/4 cup walnuts.
Mix together with the 1/4 tsp poppy seed. Spread this mixture onto a cutting board
Form a ball out of the cheese mixture and roll the cheese ball over the toppings to fully coat and shape into an even ball as it's coated.
Serve right away or cover and refrigerate until ready to serve
Note: Looking for a change?
Divide mixture into 3 and roll into logs
Wrap in cling wrap and refrigerate till required
Coat each log with a different coloured ingredient
Curry powder: yellow
Paprika powder: red
Parsley, finely chopped: green
