Healthy Banana Bread Recipe

"Healthy Banana Bread Recipe"


Ingredients:

  • 11/4 cups mashed banana

  • 5 large eggs whites

  • 21/2 cups almond meal

  • 1/2 cup coconut sugar

  • 1/2 teaspoon each cinnamon and salt

  • 1 teaspoon vanilla bean paste

  • 1/4 cup coconut oil

  • Sliced almonds for top


Method:

  1. Preheat oven to 170°C.

  2. Line 11x23 cm bar tin with baking paper and spray with kitchen spray.

  3. Mix mashed banana, oil and vanilla in a bowl and set aside.

  4. Beat egg whites till white and stiff. Set aside.

  5. Mix almond meal, coconut sugar, cinnamon and salt in a large bowl.

  6. Add banana and oil mix and fold through.

  7. Carefully fold in beaten egg white trying to keep it light and fluffy.

  8. Sprinkle sliced almonds on top.

  9. Bake at 170°C for 30 to 40 mins or till a skewer comes out clean.

  10. Cool in tin. Slice when cold.
