Grandma's Meatballs

I am sure that we all have favourite recipes that we remember from our childhood. In our family, one of those recipes is my grandma's meatballs. They were always ready for a BBQ, to make burgers for lunch or ready to cook for an evening meal with either a salad or vegetables and mash.

These can be made to size and then packed, uncooked and placed in the freezer for a quick dinner or an emergency meal. Double the recipe to have enough to freeze. Give them a try!


"Grandmas Meatballs Recipe"


Ingredients:

  • 1 kg mince

  • 2 rashes bacon – finely diced

  • 2 large onions – finely diced

  • 1 large carrot – grated

  • 2 tablespoon tomato sauce

  • 1 teaspoon mixed herbs

  • Ground black pepper

  • 1 teaspoon salt

  • 1 large egg

  • 1 tablespoon parsley – finely chopped

  • ½ cup shallots – finely chopped

  • 2 cup plain flour


Method:

  1. Place all ingredients into a bowl except for flour.

  2. Using gloves mix until well combined.

  3. If mixture is too moist add 1 – 2 tablespoon of plain flour.

  4. Place 1 cup plain flour onto a board or a plate.

  5. Using an ice cream scoop, make all meatballs the same size 6.

  6. Mould into meatballs.

  7. Roll in plain flour.

  8. Heat 2 tablespoons oil in pan.

  9. Place meatballs in pan and cook on one side till brown.

  10. Turn and brown on the other side.

  11. Add more oil to pan as required.

  12. Remove from pan and drain on kitchen paper.

  13. Place in oven to keep warm until required for serving.

  14. Serve with gravy and vegetables or a tossed salad.

  15. Make them flat and use them on a burger.

  16. Make them smaller and add a tomato sauce. Serve with pasta.

  17. Serve as a snack with tomato sauce.
