Ginger Snaps

This is a very old recipe that my mother used to make

These are very crisp biscuits

Ginger Snaps


90 gms butter

1/3 cup brown sugar

1/3 cup golden syrup

1 1/3 cups plain flour

3/4 teasp bicarb of soda

1 teasp ground cinnamon

1 teasp ground ginger

1/4 teasp ground cloves

1/2 teasp cardamon


  1. Preheat oven to 180C

  2. Place butter, sugar and golden syrup in a saucepan and stir till melted

  3. Remove from heat

  4. Stand for a few minutes

  5. Add sifted dry ingredients

  6. Stand till just warm

  7. Roll 2 teasp into a ball

  8. Roll in cinnamon sugar if desired

  9. Place on a tray and flatten

  10. Bake in a moderate oven for about 12mins or until brown

  11. Baking longer makes them harder
