Everyone Loves an Apple Dessert
I made this one last week and in my Grandson's words, its "the favourite so far"
Caramel Apple Pudding
1 x large can pie apples
pinch ground cloves
150gms soft butter
1 cup caster sugar
1 tsp vanilla extract
200 ml milk
1 ⅔ cup self-raising flour
1 cup water
½ cup golden syrup
1 cup brown sugar
Vanilla ice-cream to serve
Icing sugar, to serve (optional)
Preheat your oven to 180°C (fan-forced)
Lightly grease a 25cm-wide baking dish.
Mix apples with cinnamon and cloves
Place the whole can of apples in the bottom of the baking dish.
Cream butter and sugar till white
Add eggs one at a time and beat well after each addition
Fold in sifted SR flour alternately with milk
Place the water, brown sugar and golden syrup into a small saucepan
Stir regularly for 2-3 minutes until the sugar has dissolved.
Without stirring, increase the heat slightly and let the mixture come to the boil.
Cook for a further 2 minutes. Set aside
Pour the prepared batter over the top of the sliced apples and smooth over
Gently pour approximately three-quarters of the sugar syrup over the back of a spoon over the top of the batter
Place the pudding into the oven to bake for 45 -50 minutes or until the top of the pudding is golden brown and the sponge is cooked through when tested with a skewer.
Drizzle the remaining syrup over the pudding and allow it to sit for 5 minutes before cutting it into pieces.
Sift a little icing sugar on top when serving
Serve with a little ice cream and cream or custard
