This is a very old recipe that my mother used to make often. We lived on a sugar cane farm and visitors often arrived unannounced in the days before mobile phones and the internet.
She had a few recipes that she could throw together quickly and have it baked in half an hour.
I have no idea what its real name ever was but, it got its name because, it literally was, "everybody's favourite"
It can be made quickly...it doesn't need to be beaten, cooks quickly and will keep for a week .... if it ever lasts that long.
You can use any dried fruit that is a favourite with your family, dried apricots, cranberries, dried apple or chopped dates.
Everybody's Favourite Slice
3/4 cup coconut sugar
1 1/2 cups SR flour
200gms chopped dried fruit (or 1/2pkt mixed fruit)
1/2 cup desiccated coconut
1 tablesp honey
40gms (2 tablesp) butter
Preset oven at 180C
Mix all dry ingredients together in a bowl
Melt butter and honey in a saucepan
Mix into dry ingredients
Press into a 20 x 25cm pan
Bake in a moderate oven to golden brown
While still warm, ice with lemon or lime icing
2 cups sifted icing sugar
2 tablesp lemon or lime juice
Add lemon /lime juice till a good consistency
Ice slice while still warm
