Everybody's Favourite

This is a very old recipe that my mother often made. We lived on a sugar cane farm and visitors often arrived unannounced. She could quickly throw it together and serve for afternoon tea

I have no idea what its real name ever was, but, it got its name because it literally was, "Everybody's Favourite" It is very easy to make, cooks quickly and keeps for a week...if it ever lasts that long! You can use other fruit like cranberries, chopped dates or apricots if mixed fruit is not your "thing" but Mum always had a packet of mixed fruit in the pantry on the farm for just such occasions. I love it with mixed fruit!

Everybody’s Favorite Slice


¾ cup coconut sugar

1 ½ cups self raising flour

½ packet of mixed fruit (or sultanas if you prefer)

½ cup coconut

1 tablespoon honey

50gms butter

Lemon Icing

2 cups icing sugar

1 lemon

extra coconut to sprinkle on top


1. Preheat oven to 175C

2. Prepare a 18 x 28cm pan with baking paper and grease well

3. Mix all dry ingredients together in a bowl

4. Melt honey and butter in a saucepan

5. Mix into dry ingredients

6. Press firmly into a 18 x 28cm pan

7. Bake at 175C until pale brown (approx 20 -25mins)

8. While still warm, ice with lemon icing

Lemon Icing

1. Sift 2 cups icing sugar into a bowl

2. Add freshly squeezed lemon juice, 1 tablesp at a time till you have a thick, smooth icing

3. Pour over slice while still warm and spread evenly

4. Allow to set before cutting into slices

5. Sprinkle with coconut
