Easy Tomato Soup

This is now definitely soup weather, isn't it? This is a great weekend, easy dinner, or Sunday night meal. This is one of my favourite soups. I always have tomato soup and a can or two of tomatoes in my pantry, especially in the winter months. It provides a quick, inexpensive and tasty meal in minutes

Homestyle Tomato Soup
Ingredients
1 can Big Red Tomato Soup (or your favourite brand) (440gms)
1 can crushed tomatoes (440gms)
1 punnet small cherry tomatoes (if desired)
1 drizzle of oil for baking dish and saucepan
2 medium onions finely diced
250gms bacon, finely diced
4 cloves garlic finely diced
1 tablesp parsley
1 tablesp chopped oregano or basil
1 cup milk or cream and milk
Method
If using cherry tomatoes, place a little oil in a baking dish
Set oven at 200C and place cherry tomatoes in baking dish
Cook tomatoes just until they begin to split
Remove from oven then set aside till serving
Make your soup while tomatoes are cooking
Place a little butter in a saucepan
Cook finely diced bacon, onion and garlic in a saucepan till onion is clear
Add can tomato soup
Add can crushed tomatoes
Allow to simmer for 5 mins
Add 1 tablesp chopped parsley
Add 1 tablesp chopped oregano leaves or basil
Fold through milk and heat slowly
Do not boil
Serve into bowls
Garnish with split cherry tomatoes and parsley or basil
Garnish with a spoonful of cream on top if desired
Serve with fresh crusty bread
