Double Choc Fudge Brownie

Try this brownie recipe. It is a great family favourite if ours. It makes a large quantity so plenty left to freeze

Double Choc Fudge Brownie
Ingredients
500 gms butter melted
4 cups sugar
4 teasp vanilla essence
8 eggs
2 cups plain flour
11/3 cups cocoa powder
11/2 teasp baking powder
200gms quality dark chocolate chopped or good choc bits
Method
1. Preheat oven to 170C
2. Prepare pans with buttered baking paper
3. Place butter, sugar and vanilla in a large mixing bowl
4. Beat till soft and creamy
5. Add eggs and beat till combined
6. Sift flour, baking powder, cocoa and salt into a separate bowl
7. Fold through butter mixture till just mixed, do not over mix
8. Fold chocolate through
8. Divide between trays (see Note)
9. Cook till skewer inserted at the centre comes out clean
10. Cool, cut into squares and dust with icing sugar
10. Can be served as a dessert with ice cream and cream or add to a lunch box
Note:
This is a very large recipe so you will need to prepare large trays or several small trays
You can use 4 x trays with 500gms in each or pour into 2 x larger trays
You can add 2 cups of nuts to this recipe if you like nuts or....add nuts to 1/2 mixture
