Delicious Coconut Chicken Laksa

Coconut Chicken Laksa

Ingredients

Laksa Paste

2-4 red chillis

2 cloves garlic

2 stalks lemon grass peeled

4 kaffir lime leaves ribs removed

1 teasp turmeric fresh or ground

1 tablesp fish sauce

1 tablesp lime juice

Laksa Soup

2 tablesp coconut oil

500mls chicken bone broth or stock

500gms chicken thighs sliced into strips

250gms rice or kelp noodles

400mls coconut milk

1 tablesp coconut sugar

2 tabesp lime juice

1 tablesp fish sauce

½ cup snow peas

1 small Lebanese cucumber, halved, seeds removed and sliced

1 cup bean sprouts

½ cup coriander leaves

½ cup basil and/or mint leaves

2 shallots finely sliced

1 red chilli finely sliced for serving

1 lime cut into wedges for serving

Method

1. Make the laksa paste

2. Blend all of the ingredients in a food processor or mortar and pestletill smooth

3. Add chilli according to taste. (I used 2 and it was hot! Maybe try 1 first)

4. Heat oil in a large pan over medium heat

5. Add paste and stir 1-2 mins until fragrant

6. Pour in stock or broth, bring to a simmer

7. Add chicken thighs and noodles.

8. Cook for 10 mins or until chicken is cooked through

9. Add coconut milk, lime juice, coconut sugar and fish sauce

10. Simmer gently for 5 mins

11. Stir through cucumber, bean sprouts and snow peas

12. Taste. It should be a balance of spicy, salty, sweet and pungent.

13. Adjust if necessary by adding more chilli (spicy) fish sauce (salty) coconut sugar (sweet) or lime juice (pungent)

14. Divide the soup between 4 bowls

15. Top with herbs and shallots

16. Serve with reserved chopped chilli and lime wedges

Note: This recipe is delicious with prawns or scallops instead of chicken
