Danish Apple Cake

Danish Apple Cake

Ingredients 3 Eggs (160g... Add milk to make up to 160g if eggs are too small)

160g Coconut sugar or castor sugar

1 Tsp Pure vanilla extract

1/2 Tsp Baking powder

1/3 Tsp Fine sea salt

1 Tsp Ground cinnamon

1/2 Tsp Ground cardamom

160g SR flour

1/2 cup shaved almonds/or almond slivers (50g), toasted

4 Medium-sized tart apples diced (dice 3.5 apples, Slice 1/2 apple for garnish)


1. Preheat the oven to 180C

2. Line a 18cm (7-inch) springform cake pan or loaf pan with baking paper and then butter it.

3. Peel, core, and dice 3.5 of the apples.

4. Slice other 1/2 apple for garnish

5. Place all dry ing into a bowl. Add diced apple and stir to cover with flour.

6. Place wet ing into a jug and whisk together

7. Add wet ing to dry and mix lightly. (the mixture will be similar to that of muffins).

8. Spread into the pan.

9. Garnish with apple slices and sliced almonds

10. Sprinkle with Demarara sugar.

11. Bake for 50-60 minutes, or until browned and a toothpick in centre comes out clean.

12. After 1 minutes, run delicately a knife along the side of cake to loosen, then remove from the side of springform pan.

13. Place a cooling rack upside down over the cake.

14. Turn rack and cake over.

15. Remove the bottom as well as the baking paper of the springform pan.

16. Place back on the rack.

17. Cool completely before serving.


Try adding pears instead of apples or

Pears and ginger

Serving suggestions:

Cut into slices and serve with either sweetened whipped cream, sweetened thick yogurt or ice cream.
