Dairy-Free Chocolate Cake

Dairy Free Chocolate Cake
Ingredients
2 cups flour
1 teasp salt
1 teasp baking powder
2 teasp baking soda
3/4 cup cocoa powder
2 cups brown caster sugar
1 cup vegetable oil
1 cup hot coffee (1:25teasp instant coffee to 1 cup water)
1 cup soy milk/oat bran/almond
½ cup silken tofu puréed
1 teasp vanilla
Method
1. Preheat oven to 160C
2. Grease and flour 2 x 9" pans
3. Sift flour, salt, baking powder, soda, cocoa and sugar into a large mixing bowl
4. Make a well in the centre
5. Add oil then coffee
6. Add milk
7. Add puréed tofu and vanilla
8. Beat at a medium speed for 2-3 mins
9. Pour batter into pans or into cupcake papers (half fill)
10. Bake 25 to 30 mins
11. Check to see if cooked with a cake tester
12.Check cupcakes after 15 mins
13. Cool completely in the pan before removing
14. Ice as desired
Coconut Chocolate Ganache
2 cups dairy free/vegan chocolate
2 cans coconut cream *See note
2 teasp vanilla
Method
On the day before place coconut cream in refrigerator to chill
This will make it easier to scoop the firm cream out of the cans
Melt chocolate in 20sec increments in the microwave
Warm coconut cream
Add vanilla
Combine coconut cream and melted chocolate
Once completely melted, whisk till completely smooth
Place in the refrigerator to chill for 3-5 hours
When the mixture is a firm gel right through, .
Check to see that it is solid
It should depress when pressing a finger into it
Scoop the mixture into a deep mixing bowl
Stand till soft enough to whip with a mixer
Beat till fluffy. Colour will change to colour of milk chocolate
Spread some between the 2 cake layers
Pour remainder over the cake and read evenly
Work quickly so that ganache doesn't become too soft and runny
Return to refrigerator for 4 or 5 hours or overnight if possible
Decorate as desired
Note
Try to find a coconut cream that sets well upon refrigration
Don't use Pandaroo
