Queen of Hearts Vanilla Cupcakes


11/4 cups plain flour

3/4 teasp baking powder

1/4 teasp baking soda

1/2 teasp salt

2 eggs

1 cup sugar

2 teasp vanilla extract

1/2 cup oil (vegetable, canola or extra light olive oil)

1/2 cup buttermilk ( or 1/2 cup milk plus 1/2 teasp white vinegar/ lemon juice) Add acid to milk and leave set aside for 5 mins before using


1. Preheat oven to 160 C

2. Prepare papers into pans

3. Sift flour, baking powder, baking soda, and salt

4. Beat eggs with a mixer for 30 seconds, add vanilla, and beat to incorporate

5. Slowly add sugar and beat well after each addition (about30 seconds)

6. add oil and beat to incorporate

7. Add sifted flour and milk alternately

8. Scrape sides of the bowl down

9. Batter will be thin

10. Distribute batter evenly into prepared papers

11. Fill to 2/3 full. ( use Ice-cream scoop)

12. Bake for 20 to 22mins, Check at 20 mins

13. Cool in pan for a few minutes then remove and cool on a wire rack


To make Red Velvet Cupcakes

Replace 2 tablesp flour with 2tablesp good quality chocolate powder Add 1 bottle red colour

Queen of Hearts Vanilla Butter Cream


1 cup unsalted butter at room temp

1/2 cup vegetable shortening at room temp

2 to 3 tablesp vanilla essence

1 tablesp water, milk or double cream

4 cups sifted icing sugar


1. Beat butter at high speed till soft and pale

2. Add vegetable shortening and beat for another minute

3. Add vanilla and water then beat at medium speed till, well incorporated

4. Add sifted icing sugar and beat till combined

5. Do not over mix or Buttercream will curdle. Adjust consistency if necessary
