Creamy Noodles with Chicken and Corn

Noodles with Chicken and Corn Ingredients 4 x 72g pkts 2-minute noodles, chicken flavour 2 tbsp Olive oil 1 onion finely chopped 2 cloves garlic finely chopped 200g middle bacon, rind and fat removed, diced 3 cups cooked BBQ chicken chopped 400g can creamed corn 1 cup frozen corn or 1 can drained corn 300ml tub lite cooking cream 1/4 cup flat leaf parsley, finely chopped


  1. Cook noodles. in a saucepan of boiling water for 2 minutes. Drain well.

  2. Reserve flavour sachet

  3. Heat oil in a large, deep frying pan over a medium-high heat

  4. Add bacon, onion, and garlic and cook for 3 to 4 minutes or until bacon is crisp.

  5. Add bbq chicken, corn, chicken flavor sachets, and cream

  6. Fold through and cook for 1 minute.

  7. Add the noodles and stir to combine.

  8. Using tongs, divide the noodle mix between serving bowls

  9. Sprinkle with parsley

  10. Serve.

Note: For a dish with fewer calories but still with a beautiful creamy sauce, add 300gms of Philly Cream Cheese at room temperature instead of cream. You will never tell the difference!
