Cooking Class....Dinosaur Cookies
Children love cooking. They are happy to cook at any time but more importantly, they love to eat. These little Dragonflies loved baking these Vegan Dinosaur Cookies this week.



Chocolate Dinosaur Shortbread Cookies
Ingredients
1/4 cup coconut sugar
3 tbsp. coconut il
1/3 cup coconut milk
1/2 cup plain flour
1/3 cup almond meal
1/4 cup unsweetened cacao powder
1 tbsp. cornflour
1/2 teasp baking powder
1 pinch salt
1 teasp vanilla
Method
1. Mix sugar, coconut oil,and coconut milk in a large bowl
2. Sift flour, almond meal, cacao powder, cornflour, baking soda and salt into bowl
3. Mix well to create a dough
4. The dough will be really soft
5. Too soft?...add flour. Too hard? ...add coconut milk.
6. Create a ball, wrap and place in fridge for 30mins
7. Prepare tray with baking paper. Grease
8. Set oven to 160C
9. Place baking paper on bench.
10. Roll dough into a large circle, 1cm thick
11. Cut dough into shapes and place on baking tray
12. Stamp each cookie with a dinosaur footprint
13. Bake for 8 to 10mins
14. Cool on tray
15. Store in a sealed container
