Chicken and Mushroom Pasta Bake

Chicken and Mushroom Pasta Bake


375 gms penne

1 barbequed chicken, skin and bones removed and meat chopped coarsely

1 x 490gm jar creamy mushroom sauce

250gms fresh mushrooms sliced finely

1 small onion chopped finely

1/2 cup shallots chopped finely

120gm packet baby spinach

250gms shredded mozzarella or favourite mixed cheese topping


  1. Preheat oven to 200C

  2. Cook penne in a large saucepan of boiling water

  3. Cook till al dente and drain well

  4. Place chopped onion and shallots in a pan with sliced mushrooms

  5. Cook for a few minutes till onion is clear

  6. Combine chicken, mushrooms, mushroom sauce and spinach in a large bowl

  7. Spoon into a large ovenproof baking dish

  8. Sprinkle evenly with mozzarella or favourite mixed cheese topping

  9. Bake for 20 to 30 mins till top is a beautiful golden brown and pasta mix is heated through

  10. Serve immediately with a salad

Note: Leave the mushrooms out if the family doesn't enjoy them. Maybe use peas and corn instead
