Cheesy Tomato Pasta
This is a great family recipe that I tried over the weekend. So simple to make and so delicious!!!

Cheesy Tomato Pasta
Ingredients
500-750gms fresh mini tomatoes, any variety
1 red onion, diced
5 cloves garlic, diced
2 tablesp olive oil
1/2 cup white wine (can use stock)
1 bunch basil, leaves removed
200gms feta cheese
250gms pasta
salt
parmesan to garnish if desired
Method
Preheat oven to 180C
Place olive oil into a baking dish
Place washed cherry tomatoes into the baking dish
Shake to cover tomatoes in olive oil
Add diced onions and garlic
Add half picked basil leaves
Make a space in the centre of the baking dish and place feta cheese in the centre
Pour over white wine
Place in oven and cook for 40-45mins
Meanwhile, cook pasta el dente and set aside
Check that tomatoes are cooking about halfway through cooking time
Remove from oven after 40-45mins
You need to have a little of the liquid left in the dish to make the sauce
Stir feta through.
It may look a little lumpy but this is not able to be seen when pasta is tossed through
Add pasta and toss gently
Place into serving bowls
Garnish with fresh basil leaves and parmesan
This quantity makes 4 generous serves
Note
This is a good recipe to use up very ripe tomatoes. The more ripe the tomatoes, the more delicious this dish is. You can use large tomatoes with the cherry tomatoes but they need to be roughly chopped into chunks and placed in the baking dish with the cut side down
