Best Ever Bolognaise Sauce

It always takes a while for a recipe to become a family favourite. This one has been around for a long time, shared and shared again.
This recipe can be used for Lasagne and Pasta Bake and will also freeze well

Bolognaise Sauce
Ingredients
1 kg beef mince CL 85/150)
1 kg diced brown onions
3 gms dried oregano
100 gms garlic
1600gms Italian tomatoes
375gms tomato paste
250gms diced middle eye bacon
pinch black pepper
1/2 teasp salt
20gms sugar
5gms fresh oregano finely chopped
3gms finely chopped flat leaf parsley
Method
1. Cook onions and garlic in batches with bacon
2. Cook mince in batches and place in a saucepan with onion, bacon and garlic
3. Add all remaining ingredients except fresh oregano
4. Bring to the boil and simmer slowly for at least 2 hours
5. Fold in finely chopped fresh oregano and parsley before serving
6. Serve on your favourite pasta garnished with oregano leaves and parmesan cheese
