Baked Parmesan Zucchini

Baked Parmesan Zucchini

Crisp, tender zucchini sticks oven-roasted to perfection. It’s healthy, nutritious and completely addictive!

Ingredients

4 large zucchini, quartered lengthwise

1/2 cup freshly grated Parmesan

1/2 teaspoon dried thyme

1/2 teaspoon dried oregano

1/2 teaspoon dried basil

1/4 teaspoon garlic powder

Kosher salt and freshly ground black pepper, to taste

2 tablespoons olive oil

2 tablespoon chopped fresh parsley leaves


Directions

1 Preheat oven to 180.C degrees F.

2. Coat a cooling rack with nonstick spray and place on a baking sheet;

3. Set aside.

4. In a small bowl, combine Parmesan, dried herbs, garlic powder, salt and pepper, to taste.

5. Pour into a plastic zip lock bag

6. Place zucchini into prepared bag. Shake well. Make sure that parmesan sticks to zucchini

7. Place coated zucchini onto a baking sheet, on a silicon sheet if you have one

6 Drizzle with olive oil and sprinkle with any left over Parmesan mixture.

7. Place into oven and bake until tender, about 15 minutes. Do not bake too long

8. Place under griller for 2-3 minutes, or until crisp and golden brown.

9 Serve immediately, garnished with parsley, if desired.
