Baked Chicken Enchiladas

It is s nice to find new recipes to add to the list of favourites and this one has made the grade in our house. I have found a new website that may suit lots of you. It has great recipes for kids, many of which are suitable for the whole family.

You can make these enchiladas well in advance and cook them one at a time or all at once....what ever suits your circumstances

Baked Chicken Enchiladas


2 tablespoons olive oil

1 brown onion, chopped

2 cloves garlic, Finely chopped

3 chicken breasts, (approx 160-200gms) chopped into 2 cm dice (See note)

1/2 red capsicum, thinly sliced

3 tbsps taco seasoning (or make your own)

2 tablesp chopped herbs, parsley or chives or both

1 tin black beans, drained

1 cup cooked brown rice

1/2 cup sour cream

3/4 cup grated cheese

8 tortillas

3 tbsps tomato paste

1/2 cup grated cheese


1. Preheat your oven to 180C

2. Heat the olive oil in a frypan, fry the onion and garlic until soft.

3. Fry the chicken until golden.

4. Add the capsicum and fry 2-3 minutes

5. Add the drained black beans and rice and cook for 2-3 minutes more.

6. Add the sour cream, herbs and grated cheese and mix well to combine.

7. Divide the mixture between 8 tortillas and roll up.

8. Place in a baking dish and top with the tomato paste and grated cheese.

9. Bake for 25 minutes at 180C

10. Serve with guacamole and sour cream


I prefer to use other parts of the chicken as opposed to breasts. While the breasts have very little fat, I find them very dry.

I think that chicken tenderloins are a good choice for this dish, very little fat but tender, juicy.and lots of flavour

The other cut of chicken that I prefer are the thighs but they do contain more fat. You can cut the fat off and the flavour is far superior

If you would like to add more green, try placing a few spinach leaves on the tortilla before the chicken mix

Homemade Taco Seasoning


1 tablesp chilli powder (careful here if making for children)

1 teasp smoked paprika

1 teasp cumin

1/4 teasp cayenne (careful)

1/2 teasp oregano

1/2 teasp salt

1/4 teasp freshly ground pepper.

Combine all ingredients and store in a glass jar

This is about the same size as 1 packet of store bought seasoning

Start by using 1/2 the suggested quantity in the recipe above and then add more to taste or stick with the store bought seasoning
