My favourite pasta is most definitely a simple prawn pasta
Do the food prep early, then leave till you are ready to eat before cooking. This takes only minutes to make
This delightful dish is very light relying on the fresh herb and lime/lemon flavours for flavour

Prawn Pasta
Ingredients
1/2 cup good quality olive oil
500gms prepared peeled green prawns
1 red chilli finely sliced into thin strips
4 cloves garlic finely diced
1 small red onion finely sliced.
1 cup picked basil leaves
1 tablesp picked parsley leaves
1/2 cup baby spinach leaves if desired
1/2 cup lemon or lime juice
salt and pepper
2 punnets sweet baby tomatoes in season
quantity of cooked pasta of choice
Method
Place tomatoes in a pan, drizzle with olive oil, salt and pepper
Place in the oven at 180C till tomatoes split and begin to brown
Remove from oven and set aside
Place oil in a frying pan
Cook onion and garlic gently till soft but not brown
Add green prawns
Cook prawns till pink. Just 2 or 3 minutes
Add all herbs and spinach if using
Toss in pan
Throw in lime or lemon juice
Toss in roasted tomatoes
Toss again
Toss through cooked pasta of choice before serving
May be garnished with parmesan and basil leaves if desired
Note
You can use any seafood with this recipe
Also works with chicken tenderloins or thighs if seafood is not your thing
If using chicken, you might like to add cream
